The Victor Harbor Horse Drawn Tram is located in the city of Victor Harbor, South Australia, Australia. The tramway runs for half of its route over a 630 metre wooden viaduct or pier, locally described as a causeway. It links the visitor information centre in downtown Victor Harbor with the nearby Granite Island recreation and nature park.  It was built in 1867, and has offered passenger service since 1894 , to the present day. It is one of the very few horse-drawn tram routes remaining in public transit service anywhere in the world, and provides service every day throughout the year. There are four tramcars, each hauled by one of 8 Clydesdale horses.

Pear-shaped Puffballs

P is for Pear-shaped Puffballs
(Lycoperdon Pyriforme)

One of the several species of smaller Puffballs, is the Pear-shaped Puffball. Huge masses of hundreds of these puffballs can cover the length of well rotted hardwood logs. Individual fruiting bodies are 2-5cm tall, shaped like a pear, with the swollen end up. They are smooth with fine, mealy grains. As the spores ripen inside, a small hole develops on the top of the fruiting body. Raindrops that land on the puffball, tap the thin skin and force out a cloud of spores that will drift away in the wind.

Small Puffballs can be eaten safely, but it is important to identify them well. They should be cut open from top to bottom, to be sure there is no eveidence of a developing stem, cap or gills. The button stage of the deadly Destroying Angel mushroom resembles a Puffball.

M is for Morkie - ABC Wednesday

A Morkie is a cross of a Maltese and a Yorkshire Terrier.
Years ago this type of dog would have been called a MUTT, but in this day and age,
they are considered designer dogs, bred on purpose, and cost a fortune to buy.
This is my Morkie Mutt, Merfy

And to me, he's priceless!

Indian Pipe - Macro Monday/ABC Wednesday (I)


While on vacation at the cottage, I spent a lot of time (too much time), photographing various mushrooms and fungi. I thought this little gem was some king of fungus, but I was wrong.

It's a herbaceous perennial plant (Monotropa uniflora), in the Ericaceae family,
AKA - Indian Pipe, Ice Plant, Fairy Smoke, Ghost Flower, Corpse Plant, Ghost Pipe, Dutchman's Pipe, Eyebright, Convulsion Weed, and Fit Root.


This is one of about 3000 species of non-photosynthetic (i.e. heterotrophic) flowering plants. It's white and doesn't have any chlorophyll. Instead of generating energy from sunlight, it is parasitic. Its hosts are certain fungi that are mycorrhizal with trees, meaning it ultimately gets its energy from photosynthetic trees. (Thanks for that info Wikipedia).
It can grow in very dark environments as on the floor of dense forests, which is exactly where I found it!

Burra Homestead

The old BURRA homestead is one the most photographed in Australia, and was made famous by one of the best photographers in the world, Ken Duncan. The photo has become an outback icon after being used on an Australian rock band's album cover (Midnight Oil,1987), that went platinum world wide.

The original Duncan print is sold out, so I had to go take a few shots of my own.

Burra is a pastoral centre and historic tourist town in the mid-north of South Australia. It lies east of the Clare Valley in the Bald Hills range, part of the northern Mount Lofty Ranges, and on Burra Creek.

ABC Wednesday - Z - Zucchini

I'm not much of a gardener, but I can grow these!

Zucchinis! But then...who can't grow 'em?

I love the flowers, and they are great to eat, raw in salads or deep fried in tempura.
 
The flowers have a simple fresh taste and a delicate texture. They aren't flowery tasting, but more like extremely mild zucchini or corn.

Here is a great recipe for deep fried zucchini flowers (squash blossoms).

2/3 cup all-purpose flour
2/3 cup club soda
1/4 teaspoon salt
4 cups oil for deep frying 18 zucchini blossoms (I use canola, safflower or olive oil)
Heat the deep fryer to 375 degrees. Make a batter with the flour, salt and soda. Working in batches of 6, dip blossoms in batter to coat, brushing them against side of bowl to remove excess batter, pop them into the deep fryer for 1 to 2 minutes per batch until golden, Drain them on paper towel and sprinkle with salt. I like use a finishing salt, Fleur de Sel, Himalayan Pink Salt etc. Serve warm, and eat immediately. If you don't have a deep fryer, you can use a deep pot, you will have to turn the flowers to brown evenly.

V is for...VIDALIA - ABC Wednesday

Vidalia Onions...I love 'em


Sweet and succulent Vidalia Onions begin to fill grocery store and farmers' market vegetable bins during late spring and stay in season throughout the summer. While there are some other sweet onion hybrids, the real deal, identifiable by the official Vidalia® Onion sticker is only grown in a 20-county area of Georgia.

The delicious mild, yet distinctive, flavor of Georgia's Vidalia Onions is attributed to the low sulfur content of the soil combined with the mild Georgia climate and stringent quality control measures. (About.com)

If it's not grown in Georgia...it's not a Vidalia!
Verification Beware of counterfeit Vidalias!

Sweet Vidalia Onion Relish (Paula Deen)
4 large sweet Vidalia onions, skins removed and finely chopped
2 cups green cabbage, finely shredded (approximately 1/4 head)
1/4 cup kosher salt
4 1/2 cups water, divided
2 red bell peppers, chopped
1/2 cup light brown sugar, packed
2 cups apple cider vinegar
1 tablespoon dried mustard powder
3/4 teaspoon turmeric
1/4 cup all purpose flour
1 teaspoon mustard seed
2 teaspoons celery seed
3 pint canning jars and lids, sterilized


Directions.
In an extra large glass mixing bowl, combine chopped onions and shredded cabbage. Dissolve salt into 4 cups of water and pour over onions and cabbage. Allow to soak overnight.
Drain onions and cabbage and set aside.
In a large saucepan add apple cider vinegar and light brown sugar. Stir until brown sugar has dissolved. Add dry mustard, turmeric and remaining 1/2 cup water. Stir together.
Add flour and stir until a thick paste is formed. Whisk in celery seed and mustard seed.
Bring the entire mixture to a boil over medium high heat, making sure to stir constantly to prevent sticking. Once thickened, add the drained cabbage and red bell pepper.
Continue to boil for an additional 5 minutes.
Sterilize jars and lids directly before using for 10 minutes in simmering water or in the dishwasher. Remove one at a time when ready to fill.
While onion relish mixture is still hot, ladle into the hot sterilized jars, filling to within 1/4 inch of the top. Wipe rims with a clean damp cloth and seal jars with lids and rings.
Process in a boiling water bath (making sure water level is 1 inch over the top of the jars) for 15 minutes. Remove from water bath and allow to cool on the counter.

Yummers...I'm going to be busy tomorrow making jars and jars of this!
